A quiet achiever, and a sommelier and drinks custodian with focus, diligence and a seemingly unquenchable thirst for knowledge, Nina Throsby is a younger-gen practitioner who’s flourished at The Shorehouse before being unleashed on the Kailis Group’s wider drinks programs. Tenacious in approach, Throsby’s work is illustrated with creative lists that lean heavily into local producers while selecting carefully from further afield. Colourful, broad wine programs have followed, tapping the zeitgeist while flexing with the individual needs of each venue. A gun, with fresh ideas and an individual take on the role of sommelier.

Down by the Fremantle harbour, this Freo institution celebrates seafood with a wine list that refuses to put on any pretence. Wines are well-priced, honest and interesting. Indeed, the selection shows a keen eye for the left-of-field which is pretty exciting. Start with a quality Champagne from Ayala or a sparkling vermentino from Margaret River’s Carpe Diem. That sets the scene for what follows, a mix of the traditional and the unexpected from Western Australia, the eastern states and abroad to Germany, Austria, France, Italy and Spain. An Argentinian malbec even pops its head up. The emphasis is on wines suited to a range of seafood but with 19 wines by the glass – almost half the total listing – there’s plenty of explore as a stand alone treat.

Kailis Fishmarket Café, located in Fremantle’s Fishing Boat Harbour, is a name and brand synonymous with seafood and fishing in Western Australia. The 20 year old café underwent renovation within it’s 80’s building envelope with the venue only closing for 14 days for works to be completed. Working within the site’s existing conditions and architectural features, a design brief was derived that was sympathetic to the beige brick building with arched openings and windows, was casual yet smart enough to increase night trade, and was fresh and modern without being kitsch or on trend….

Seaing Double: Top Chefs Spruik WA Seafood in Collab Dinner

THE last time Kailis Fremantle head chef Peter Manifis and Island Market culinary director David Coomer worked together, it didn’t quite pan out as expected.

Almost five years ago, a young, spritely Manifis (then of InContro) promised Coomer he would help the former-Pata Negra stalwart in the kitchen at 6.30am the next morning.

Manifis did turn up the next day, only he was late and allegedly sporting a hefty hangover.
